Beer Cupcakes with Chocolate Covered Potato Chips
I love trying fun baking recipes. Whether it is quirky decorated cakes/cupcakes or recipes that include unexpected ingredients, I like baking that stands out from everything else on the sweets table. So when I needed to bake something for a New Year’s Eve bash this year, I hit the baking blogs in search of something fun and interesting. The perfect mix of salty and sweet, I chose beer cupcakes with (my new favorite treat thanks to Ben and Jerry’s ode to Jimmy Fallon, Late Night Snack ice cream - which I cannot recommend enough) chocolate covered potato chips. YUMMY! Needles to say, it was a HUGE hit and I am getting a lot of requests for the cupcake recipe that includes Guinness and potato chips. It is a super easy recipe and makes about 24 to 30 cupcakes.
